Here are a list of thoughts I've compiled. These are my new rules when dining out (work in progress).

Never have the "ethnic" dish at a non-ethnic restaurant. It's never good and flavor has been watered down so as not to overwhelm the masses.

When possible, try peering into the kitchen to get a sense of how clean a restaurant really is. Bathrooms are a good indication as well.

Never order a dish that requires hours of braising in a restaurant that is barely occupied. It's frozen and not going to be freshly made.

Never ask a server his/her recommendation. This person has no clue what you consider good.

If a server recommends an alternative when you haven't requested one, don't take it. They are only interested in selling high profit margin food.
